Bigoli with Amarone ragout

Ingredients for 2 people

  • 250 g Nonna Rina bigoli
  • 300 g minced duck
  • salt to taste
  • pepper to taste
  • garlic
  • parsley
  • carrot
  • celery
  • 1 glass Amarone wine
  • 50 g grated parmesan

Preparation

Make a soffritto with carrot, celery, onion, garlic and parsley. Add the finely minced duck and cook with the soffritto. Cook slowly, then add the Amarone. Meanwhile, boil the water for the Nonna Rina bigoli, cook them and then sauté in the pan with the sauce.
